Quick update!

Hello there!

Talk about a great Thanksgiving! I just wanted to update you on my boutique. It went very well. I sold many of my embroidered tea towels. I only wish I had had more styles to sell. "Oh Well", I'll make a mental note of that and have more for next year.
We had a great Thanksgiving and now, I am off to embroider more tea towel (special orders)...
and decorate my house...LOL!

Have a great weekend!

How to make pumpkin puree & roast the seeds

Ok, most of you probably know how to make Pumpkin Puree. I didn't know how until about a month ago. It's so simple that it will make you sick when you realize how easy it is.
I have been working on this post for awhile, so please bare with me.

Ok, here's the first picture. Sorry all the knives are dirty...I was almost finished when I got the idea to do this. This is all the carving equipment you need.

Next, cut the top off the pumpkin and scoop out the seeds. Please keep the seeds. They are so wonderful roasted. I roast mine while I roast the pumpkins.

Yes, I use my hands...
Now, you need to quarter the pumpkin. Take your pairing knife and scrape the little pumpkin strings out.

Place the pumpkin quarters skin side up. I don't know why but they roast better that way...trust me. I also line my baking sheet with parchment paper. You don't have to do that, I just like to.

Take those pumpkin seeds and rinse them under water. Get all the orange pumpkin pieces out. You can't get them all out...and that is ok.

Ok, spread the pumpkin seeds on another baking pan and sprinkle salt and pepper to taste.

Now, you put both pans in the oven set at 375 degrees. I roast the seeds for about 20 mins. The pumpkin for about 45 mins. The pumpkins should look a little flater then when you placed them in the oven.

The pumpkin skin should just peel off. But if it doesn't you can take a knife and kinda slice it off. I have a picture of my peeled pumpkin here.

After that you just take those pumpkin pieces and put them in the food processor or blender and puree it. You might need to add water to it.

When all is said and done....I put 1 to 2 cups of puree in a freezer safe ziplock bag and freeze!
Yummy, pumpkin puree to use whenever you like.
