I was reading a wonderful blog called
Pioneer Woman. Well, when I say reading the blog...I mean just the cooking part of it. She has several running blogs on her site.
A few weeks ago she posted about how to bake/puree your own pumpkin and roast the seeds. I haven't had roasted pumpkin seeds since my childhood...and "Oh" did that bring back memories! So, I decided to try it. I already had several small pumpkins at home (impulse buy for the kids) little did I know those are the best for puree.
I have to say it was pretty easy. A little time consuming but easy. I ended up making a pie that afternoon with my puree. I made two pies and had leftover puree to store in the freezer. I must say I ended up baking both pies but, putting one in the freezer.
I was pretty impressed. The pie tasted great.

And the roasted pumpkin seeds were devoured too!
The one thing I didn't do that the Pioneer Woman did was let the seeds dry out overnight. I just washed them up and seasoned them before I roasted them. And I roasted them while the pies were baking.
That's what's been going on here!
